MOM'S BANANA BREAD
On these cold winter days, I remember how it was waking up to the delicious scent of my mom's banana bread baking in the oven. The aroma would fill the entire house. It was and still is my comfort food (usually from Starbucks) & baking it myself using my mother's recipe reminds me of my favourite family moments, sitting in front of the fire place in January with delicious gooey banana bread & creamy hot chocolate.
I decided to share my family recipe. My mom will be so proud. It came out perfect, exactly as she makes it.
INGREDIENTS
3 overripe bananas
1 egg
11/2 cup flour
1/2 cup walnuts
1/2 cup sugar (half brown, half white)
1/4 cup butter
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
METHOD
Using a fork, mash ripe bananas in a bowl.
A melted butter & sugar to a bowl. Whisk together. Add vanilla extract & eggs.
In another bowl, combine flour, baking powder, baking soda, & salt. Mix dry ingredients together then mix into wet ingredients.
Fold in banana & walnuts.
Butter a loaf pan, add batter & bake at 350 degrees for 45 mins.
Let banana bread cool, then remove from pan & slice.
